Dean has never tried for normal, and Sam has always battled with him over that. But it's clear that Dean yearns for a normal family in some soul-deep way that he never expresses. So much so that he's willing to make a deal to protect people he only has a relationship to in his head. I know he's not making this deal for them alone, it's been a piling on of everything, but the sacrificing himself to save his family is so deeply a part of him that this time he has made up a family that he can save.
